Admittedly, they only vinify wines from the regional Burgundy appellation, but with such exacting standards that these modest cuvées achieve very high quality. To achieve this, they work long and hard to obtain the finest grapes (certified biodynamic), which they then carefully vinify. The beautiful chalky terroirs of the Côtes d'Auxerre are equally well-suited to Sauvignon (Saint-Bris) and Chardonnay, although they often produce wines that are too thin due to excessive yields. At Goisot, it's the other way around: the wines' intensity and staying power make them worthy of being cited as examples.
