Guilhem Rosé 2025 from Moulin de Gassac is the winery’s organic rosé—vibrant, floral, and mineral—crafted from grapes grown on the hillsides surrounding the Thau Lagoon.

The color is a luminous coral with salmon-colored highlights. The nose is pleasant and intense, floral and mineral with citrus notes. On the palate, it offers a beautiful balance of freshness, combining aromas of red currants and red berries, with a crisp and lingering finish. Serve between 10 and 12 °C.

Organic Carignan and Grenache, grown on a clay-limestone plateau bordering the Thau Lagoon. 100% destemming, direct pressing, low-temperature fermentation, yield 50–60 hl/ha.

Best enjoyed within 2 years. Pairs well with salads, grilled meats, and fish.

Founded by Aimé Guibert in the 1970s in Aniane, in the heart of the Hérault garrigue, Moulin de Gassac brings together partner winemakers in a long-standing mission: to preserve the oldest non-cloned vines on the hillsides of Languedoc, which are threatened with being uprooted. The Guilhem Rosé is the most approachable expression of this—a delightful organic rosé, produced from a terroir quite distinct from that of the main estate.

The rosé cuvée is made from Carignan and Grenache grown on a clay-limestone plateau bordering the Thau Lagoon, in the Sète basin—a coastal terroir with a briny character, very different from the glacial gravel soils of the upper Gassac Valley. The vines benefit from generous sunshine tempered by sea mist and Mediterranean winds, which preserve freshness and natural acidity. The winemaking process is straightforward and precise: full destemming, immediate pressing without maceration, and slow fermentation at low temperatures—to extract the maximum amount of aromas without ever becoming heavy.
