Domaine Tabordet, Pouilly-Fumé Les Petites Aubues 2025: an organic dry white wine, 100% Sauvignon, grown on the Kimmeridgian marl soils of Verdigny. Notes of flowers, citrus, and pear, with a fresh palate and a briny finish. Pair with seafood, fish, or a Crottin de Chavignol.
Les Petites Aubues 2025 is the entry-level wine from Domaine Tabordet, a family-run estate in Verdigny, in the Loire region. This dry white wine from the Pouilly-Fumé appellation is made from 100% Sauvignon Blanc grapes grown using organic farming methods.
The estate was founded in the 1960s by Raymond Tabordet and later expanded by his sons Yvon and Pascal. Today, it is run by Marius, who oversees the vineyards and winemaking, and his cousin Gaël. The vines grow on soils of limestone, marl, and flint, which give the wines their minerality. The juice is gently pressed, then fermented with native yeasts.
The wine is fresh and lively, with notes of flowers, citrus, and white fruits such as pear, and a mineral hint of flint. The finish is briny.
Serve the Petites Aubues 2025 between 10 and 12 °C. It pairs well with seafood, marinated or smoked fish, white meats, and goat cheeses such as Crottin de Chavignol.
