Domaine Mardon is one of the oldest winemaking families in Quincy—records indicate that the vineyard was established around 1870, and the family has been working there ever since. Hélène Mardon, representing the fifth generation, joined the estate in 2003; since 2011, her partner, Luc Tabordet, has been working alongside her on the estate’s 16 hectares of Sauvignon. Together, they work to highlight the distinctive character of the appellation—one of the oldest in the Loire Valley, granted AOC status as early as 1936. The transition to organic farming, which began in 2019, will be fully certified in 2022.

The Quincy AOC, located on the right bank of the Cher River in the Cher department (18), produces exclusively Sauvignon Blanc wines—a deliberate monoculture that highlights a unique terroir composed of alluvial deposits, ancient gravelly sands, and limestone. This light, well-drained soil, which warms quickly in the spring, allows for early and consistent ripening of the Sauvignon grapes, while preserving their natural acidity and varietal aromatic expression.

The Domaine cuvée is a harmonious blend of young and old vines, vinified through direct pressing, followed by 24 hours of static settling, fermentation in temperature-controlled tanks, and 3 months of aging before bottling in the spring. The 2025 vintage reveals notes of boxwood, grapefruit, and white flowers, with a supple, lively, and energetic palate, and a long, lingering finish with citrus notes.

Serve between 10 and 12 °C. Food pairings: seafood, shellfish, fish, goat cheese, and charcuterie. Aging potential: 3–5 years.
