The domaine's aim is to maximize the expression of its terroirs: the 35 ha of vines are now cultivated using Biodynamic methods (Demeter certification) to let the soil live, to ensure that the grapes are free of chemicals, to enable fermentation using natural yeasts, and to reduce the amount of sulfur used in the cellar. Le Roucas, a red cuvée from the domaine Hauvette, features 60% Grenache. More accessible in youth than the estate's other red cuvées, Roucas develops on notes of thyme, mint and cherries. The finish is always fresh and elegant. Light decanting and serving at 15-16° is recommended. A great bottle from Baux de Provence.
