Domaine le Roc - Fronton - Don Quixote 2022

The Don Quichotte is Domaine Le Roc’s flagship wine—the one that best embodies Frédéric Ribes’s vision for the Fronton appellation and for Négrette, its iconic grape variety. An ambitious wine for fine dining, carefully aged, that has won over even the most demanding juries: 93/100 RVF, 2 stars and “Coup de Cœur” in the 2025 Guide Hachette.

Domaine Le Roc — Fronton’s organic pioneer

Frédéric Ribes has made Domaine Le Roc the undisputed benchmark of the Fronton appellation. A pioneer in vineyard grassing as early as 1981—at a time when the practice was revolutionary— he has committed the entire estate to certified organic farming since August 2022. In winter, the estate’s sheep graze among the rows of vines, naturally maintaining the soil. This is a consistent philosophy of living in harmony with nature, practiced for decades before organic farming became a trend.

Terroir and Grape Varieties

Négrette 60%, Syrah 40%, from selected plots on boulbène soils—these light, well-drained clay-siliceous soils characteristic of the Fronton terroir, which give the Négrette its distinctive lightness and aromatic freshness. Négrette is Fronton’s native grape variety, grown almost exclusively within this region of Haute-Garonne—a rare and endearing variety, known for its captivating notes of violet, pepper, black olives, and black fruits.

Winemaking and Aging

Hand-harvested with rigorous sorting at harvest to select only perfectly ripe berries. Gravity-fed vinification without crushing—the whole grapes flow naturally into the vat, preserving the fruit and avoiding harsh tannin extraction. Extended maceration of approximately 4 weeks for a gentle, gradual, and complete extraction of aromas and body. Aged for 18 months in oak casks and 400-liter barrels—a combination that brings roundness and complexity while seamlessly integrating the oak without masking the fruit.

Tasting Notes

Color: deep, intense, and clear red.
Nose: powerful and charming. Cherry, wild strawberry, violet—the intoxicating signature of the Négrette—accompanied by sweet spices. Remarkable complexity.
Palate: both indulgent and refined, rich yet lively. The fruitiness of cherry and wild strawberry lingers delightfully through the finish. Perfectly integrated oak, incredibly silky tannins. "Irresistible" — Guide Hachette 2025.
