The Domaine de la Réserve d'O was acquired in 2004 by Anne and Frédéric Chauffray. This 10-hectare biodynamic (Demeter-certified) estate in the Terrasses du Larzac overlooks the Hérault Valley, at an altitude of 400 m. The Domaine de la Réserve d'O vineyard boasts an exceptional terroir with poor, limestone pebble soils exposed to the north wind: the whole makes for elegant wines, always on the fresh side and rarely in excess.

Their agronomic approach is biodynamic. Like the viticulture, the winemaking is designed to be very close to natural cycles - in other words, low-intervention. The wines have quickly distinguished themselves by their playful greediness, far removed from the sometimes ascetic seriousness of some wines from this young and dynamic appellation. The style is recognizable and, in just a few years, the domaine has proved its worth, from the delicious sulfite-free cuvée SanSSoo, which reclaims the Saint-Saturnin name, threatened with obsolescence, to longer ageing exercises that are happily evolving."
