Le domaine de l'Ancienne Mercerie, located in Autignac, farms 16 ha of syrah, grenache noir, carignan, mourvèdre and merlot on terroirs in the Faugères and Coteaux du Languedoc PDOs. The vines are certified organic, and the wines are characterized by elegance and remarkable balance. The average age of the Domaine de l'Ancienne Mercerie vineyards is 25 years, including 4.5 hectares of Carignan vines over 50 years old. Yields are very low, averaging between 20 and 25 hl/ha. The grapes are hand-picked and carefully sorted in the vineyard. The ripeness of each plot is precisely monitored by berry sampling and tasting. The domaine de l'Ancienne Mercerie does not seek out over-ripeness. The work in the cellar consists of accompanying the grapes with flexible, never corrective interventions.The philosophy of Domaine de l'Ancienne Mercerie can be summed up as follows: "We want to remain a small estate to manage all cultivation and oenological operations as closely as possible, and continue to produce handcrafted, rich and original wines, deeply rooted in their terroir"
