40% Grenache Blanc, 30% Colombard, 30% Rolle (organic), grown on clay-limestone terraces bordering the Thau Lagoon. Skin contact for 2–3 hours in a refrigerated tank; fermentation at 16–21 °C; aged for 5–6 months in stainless steel tanks, without oak.

Guilhem Blanc is the organic white wine from Moulin de Gassac — the wine merchant division of Mas de Daumas Gassac, often referred to as the "Grand Cru of the Midi." Founded in 1971 by Aimé and Véronique Guibert in the upper Gassac Valley near Aniane, the estate proved as early as the 1970s that the Languedoc could produce great wines with aging potential. Moulin de Gassac brings together partner winemakers who all practice organic farming, with winemaking closely supervised by the Guibert family to ensure quality and authenticity.
Guilhem Blanc is made from a unique blend of three Mediterranean grape varieties—Grenache Blanc (40%), Colombard (30%), and Rolle (30%)—grown on a clay-limestone plateau bordering the Thau Lagoon in the Sète basin. This coastal terroir imparts to the wine a salty minerality and natural freshness typical of this region of Languedoc.
The winemaking process prioritizes aromatic purity: skin contact for 2 to 3 hours in a refrigerated tank, pressing, temperature-controlled fermentation between 16 and 21 °C, and aging for 5 to 6 months in stainless steel tanks—without any oak. The result is a fresh, lively, and mineral-driven white wine with notes of white flowers and citrus, offering great freshness and drinkability.

The 2025 Guilhem Rouge from Moulin de Gassac is the estate’s organic red wine—fruity, supple, and spicy, grown on the limestone slopes of Villeveyrac.
The color is an intense, deep red. The nose reveals aromatic complexity combining notes of red fruits and spices. On the palate, it offers a supple and fruity attack, with well-integrated tannins—a wine full of finesse. Serve between 18 and 20 °C, after lightly decanting.
Organic Alicante, Carignan, and Merlot from the Jurassic limestone slopes rich in bauxite, Villeveyrac. 100% destemmed, traditional winemaking, 10–12 days of maceration at 25–30 °C.
