To be enjoyed or drunk in 15 years.The Domaine Pavelot is a family estate in Pernand-Vergelesses that produces fine Côte de Beaune wines. Cold pre-fermentation and the use of low toast barrels allow maximum expression of the fruit.Domaine Pavelot has been working with organic farming for twenty years, and recently took the step to certification out of a concern for transparency towards its customers. The organic wines produced are fresh and delicate for the Pernand-Vergelesses and deep for the Corton. An endearing estate that is appreciated for its seriousness and the elegance of its wines. Prices have remained "wise"

100% organic Ecocert Pinot Noir, clay-limestone and silty-clay soils. Hand-harvested, gentle maceration for 3 to 5 days, alcoholic fermentation with indigenous yeasts in open concrete tanks for approximately 16 days.
