Superb overall balance.The Domaine Pavelot is a family-run estate in Pernand-Vergelesses that produces Côte de Beaune wines with finesse. Cold pre-fermentation and the use of low toast barrels allow maximum expression of the fruit.Domaine Pavelot has been working with organic farming for twenty years, and recently took the step to certification out of a concern for transparency towards its customers. The organic wines produced are fresh and delicate for the Pernand-Vergelesses and deep for the Corton. An endearing estate that is appreciated for its seriousness and the elegance of its wines.
