The Pernand-Vergelesses Village Red is Domaine Pavelot’s entry-level and flagship wine—the one that opens the door to the estate’s identity and to one of the most understated yet highest-quality appellations in the Côte de Beaune. The Pavelot family has long been established in Pernand-Vergelesses—Pavelot winemakers can be found in the village’s civil registers as far back as the 17th century. From generation to generation, the vineyard has gradually taken shape and expanded, leading to the present day, where Luc Pavelot and his sister Lise are bringing this centuries-old family legacy to life.

Of the estate’s 9 to 10 hectares, spread across the Pernand-Vergelesses valley, two-thirds produce red wines under the village appellation, 1er Cru, and Grand Cru, while the remaining third produces white wines. The entire vineyard is managed using organic farming methods and has been certified by Ecocert for many years. Domaine Pavelot thus showcases one of Burgundy’s finest aspects: thoughtful organic viticulture that respects winemaking tradition—hand-harvesting in wicker baskets, natural yeasts, and partial whole-cluster vinification—combined with the tools and knowledge of modern oenology, including sorting on a vibrating table and precise sulfiting of the harvest. La Revue du Vin de France regularly praises the work of Luc Pavelot, highlighting the intensity and aromatic purity of his latest vintages.

Le Village Rouge is made from 100% Pinot Noir planted on soils composed of a clay-limestone and silty-clay structure — a terroir that gives the Pinot Noir of Pernand-Vergelesses its signature freshness and delicacy, quite distinct from the more robust Côte de Nuits wines. The winemaking process is precise and respectful: after a gentle maceration of 3 to 5 days, which allows for a delicate initial extraction of color and aromas, alcoholic fermentation begins using only indigenous yeasts in open concrete tanks, lasting approximately 16 days.

The result is a wine with a deep color and a very expressive nose dominated by blackcurrant—the hallmark of Pinot Noir from this terroir. The palate is round, generous, and approachable, while the finish reveals present yet subtle tannins, refined enough never to weigh down the wine while ensuring good aging potential, between 5 and 10 years depending on the vintage. A Pernand-Vergelesses that retains all the freshness and elegance of the terroir, at a price that remains reasonable for the quality offered.
