The Domaine Pavelot is a family estate in Pernand-Vergelesses that produces finesse Côte de Beaune wines. Cold pre-fermentation and the use of low toast barrels allow maximum expression of the fruit.domaine Pavelot has been working with organic farming for twenty years, and recently took the step of certification out of a concern for transparency towards its customers. The organic wines produced are fresh and delicate for the Pernand-Vergelesses and deep for the Corton. An endearing estate that is appreciated for its seriousness and the elegance of its wines. Deep color. Very expressive nose dominated by blackcurrant. Round on the palate, with present yet subtle tannins; good aging potential. Serve at 16°C.
100% organic Ecocert Pinot Noir, clay-limestone and silty-clay soils. Hand-harvested, gentle maceration for 3 to 5 days, alcoholic fermentation with indigenous yeasts in open concrete tanks for approximately 16 days.
Pairings: red meat, poultry. Aging potential: 5 to 10 years.
