The Domaine Pavelot is a family-run estate in Pernand-Vergelesses that produces elegant wines from the Côte de Beaune. Cold pre-fermentation and the use of lightly toasted barrels allow the fruit to express itself fully. The Domaine Pavelot has been practicing organic farming for twenty years and recently took the step toward certification out of a commitment to transparency with its customers. The organic wines produced are fresh and delicate for the Pernand-Vergelesses and deep for the Cortons. A charming estate that we admire for its dedication and the elegance of its wines. Prices have remained "reasonable."

Deep color. Very expressive nose dominated by blackcurrant. Round on the palate, with present yet subtle tannins; good aging potential. Serve at 16°C.
100% organic Ecocert Pinot Noir, clay-limestone and silty-clay soils. Hand-harvested, gentle maceration for 3 to 5 days, alcoholic fermentation with indigenous yeasts in open concrete tanks for approximately 16 days.
Pairings: red meat, poultry. Aging potential: 5 to 10 years.
