The Domaine Olivier Pithon was created in 2001 and produces magnificent organic wines in Côtes de Roussillon. It covers an area of 19 hectares and produces 35,000 bottles. All Domaine Olivier Pithon wines are produced according to organic farming methods.

The choice of this agriculture for the domaine Olivier Pithon is based on the desire to make the best possible wines, expressing its terroir and respecting the environment in order to leave future generations a healthy piece of land. Domaine Olivier Pithon stretches over exceptional terroirs that offer a diversity of soils and climates conducive to making great wines.

The Roussillon climate is typically Mediterranean, marked by generous sunshine and prevailing winds, notably the Tramontane, which cleanses the vines and promotes optimal grape ripening. This combination of warmth and wind gives the wines aromatic concentration while preserving their freshness. The estate's soils are extremely varied, combining schist, chalky clay and marl, allowing multiple varietal expression. These terroirs give Domaine Olivier Pithon wines marked minerality, beautiful tension and remarkable depth.

Mon p'tit Pithon rouge is a fruity wine made from young Grenache and Syrah vines. Luscious, supple, fruity and spicy, it makes a superb buddy wine. A real favorite from the Olivier Pithon estate. You can pair this cuvée with aperitif dinners but also with grilled red meats or white meats.

The cuvée Lais rouge du domaine Olivier Pithon is a cuvée for laying down. More structured, this cuvée is characterized by its elegance but the power it exudes. A few years of cellaring will enable it to develop its full potential. This cuvée can be paired with fine red meats or small game.Domaine Olivier Pithon is also very interesting for these white wines.

Olivier knows how to combine aromatic power and freshness like few winemakers in the region, particularly with the cuvée Lais blanc. Laïs Blanc is a blend of Grenache Blanc, Maccabeu and Roussanne from the estate's clay-limestone terroirs. This wine seduces with its delicate nose of white flowers, citrus and white-fleshed fruit. On the palate, it is marked by a beautiful mineral tension and a persistent saline finish. It goes perfectly with seafood, grilled fish and vegetable-based dishes.

The cuvée D18 from domaine Olivier Pithon is one of the great whites of the Southeast. The wine is rich and powerful, yet well-balanced. It is to be recommended with fish or white meats in sauce.

His objective: no over-extraction in the reds, maximum freshness in the whites. The reds are more captivating since they are vinified in whole bunches. The regularity, frankness of expression and intensity of flavor of the wines coming out of the new cellar, on the heights of Calce, earned the estate a quick second star, again brilliantly confirmed this year."
