Charleston from the Guillemot-Michel estate is a truly great organic wine for fine dining—complex and vibrant. A real favorite!
The nose blends dried flowers, beeswax, candied mirabelle plums, and hazelnut. On the palate, the texture is dense, almost spherical, with an inner energy that lingers for a long time. A complex and vibrant wine, perfect for fine dining.
Created in 2016, the Charleston cuvée comes from vines planted upon the family’s great-grandfather’s return from World War I. To pay tribute to him, the Guillemot-Michel family vinifies these grapes just as he did, in old demi-muids.
The wine is vinified and aged for one year in demi-muids over 10 years old, then racked into tanks for 6 months of aging before bottling. Production is limited (approximately 800 bottles for the 2018 vintage).
A wine for aging, best served with gourmet cuisine: premium fish, free-range poultry, and aged cheeses.
The Domaine Guillemot-Michel cultivates 6.5 hectares of Chardonnay in Quintaine, using biodynamic methods since 1991.

Why is it so rare? It comes from century-old vines and is produced in very small quantities.

Quintaine 2025 is the historic cuvée from Domaine Guillemot-Michel, a biodynamic Viré-Clessé made from Chardonnay grapes grown on old vines (55 to 60 years old) around the hamlet of Quintaine. White flowers, acacia honey, ripe citrus, and notes of chalk; full-bodied and silky on the palate, supported by a mineral edge. Peak in 2032.
