Quintaine 2025 is the historic cuvée from Domaine Guillemot-Michel, a biodynamic Viré-Clessé made from Chardonnay grapes grown on old vines (55 to 60 years old) around the hamlet of Quintaine. White flowers, acacia honey, ripe citrus, and notes of chalk; full-bodied and silky on the palate, supported by a mineral edge. Peak in 2032.
The nose opens with white flowers, acacia honey, and ripe citrus, along with notes of damp stone and chalk. The palate is full-bodied and silky, yet always underpinned by a mineral tension that extends the finish. A wine that can be enjoyed young for its vibrancy, and which gains complexity (toasted hazelnut, fresh butter) after a few years.
The vines, ranging from 55 to 60 years old, surround the hamlet of Quintaine, between Viré and Clessé. The soils consist of Jurassic limestone, with white marl and clay. 100% Chardonnay.
Biodynamic farming since 1991, hand-harvested, indigenous yeasts, extended aging on lees, minimal sulfur.
Peak in 2032. Fish, cream-based poultry dishes, aged cheeses, shellfish.
