Description

Domaine Bordatto was founded in 2001 in Jaxu, very close to Saint-Jean-Pied-de-Port, when Pascale and Bixintxo Aphaule—both former winemakers—decided to settle in the heart of the Basque Pyrenean foothills. Their initial plan was to become winemakers, but the idea of producing cider came about quite naturally: the Basque Country is, in fact, a region with a long history of apple cultivation, and today grows heirloom local varieties such as Anisa, Eztika, and Mamula across 4.5 hectares of orchards.

As for wine, the estate cultivates 2.5 hectares of vineyards on a mountainside, on dolomitic bedrock, within the Basque Country’s only vineyard region, the Irouléguy appellation. The very old Tannat vines, which are difficult to cultivate mechanically on these steep slopes, are tended entirely by hand, with yields deliberately kept very low (maximum 20 hl/ha). Winemaking is carried out without additives or intervention: an average maceration of 18 days, 18 months of aging in tanks without added sulfur, very late malolactic fermentation, and the wine is unfiltered and unfined.

The result, Luruméa, is a true curiosity within the appellation—more aromatic than most Irouléguy wines, including those from more established producers, thanks to this rare choice of a single-varietal Tannat.
