Terre de Jonquières (ex-Infidèle) du Mas Cal Demoura is a blend of Jonquières terroirs; it's the Mas' historic cuvée. It features the full range of regional grape varieties that give it its elegance and structure. This great organic Languedoc wine develops fresh, licorice notes of black fruit, evolving over time towards more complex aromas (garrigue, leather, camphor, balsamic notes). Aging potential: 10-15 years.Jean-Pierre Jullien, a passionate winegrower convinced of the potential of the Terrasses du Larzac terroir, created Mas Cal Demoura in the 1970s. At the end of 2003, he passed the torch to Isabelle & Vincent Goumard, wine enthusiasts with degrees in nology from Dijon University, who took over the estate. They enriched the estate's vineyard with vines from Mas Jullien on the high-quality limestone terroir of Combariolles. The estate's philosophy is simple: the aim is to help the vines develop organically, so that they can bring out the best in this fabulous terroir. To produce grapes that are concentrated and representative of the terroir, we aim for yields of around 25 to 30 hl/ha. Its assertive character remains bordered by a velvety mouthfeel and a lively yet coated finish in long fruitiness. In this very attractive vintage, this long, complex and deep organic wine is one of the appellation's best representatives. It will require a few years to find balance and complexity.
