Thomas Pico, a young man in his thirties, has been quick to make a name for himself in Chablis. Running his organic Pattes Loup estate since 2009, Thomas Pico produces some of the most accomplished Chablis in the AOC, with sought-after ripeness, beautiful balance and real freshness. Guide des meilleurs vins de France 2020: domaine 2 étoiles. "Thomas Pico, who lives in Courgis, has been working his vines since 2004, immediately converting them to organic farming. The estate has gradually expanded, and Thomas is now also in charge of the family estate (Domaine de Bois d'Yver), from which his vines originate. (...) Vinification with indigenous yeasts, construction of a new cellar in 2014: the wines have progressed rapidly. The latest vintages shine with singular brilliance, with extended maturation times."

Gras Moutons du domaine de la Haute Févrie is a Muscadet Sèvre et Maine sur lie with a very powerful, generous body, extrovert in flavor. The finish with lovely ripe bitters and praline nuances is particularly promising. A superb bottle from Domaine de la Haute Févrie !
