Owner Dominique Hauvette offers wines with a strong personality. Domaine Hauvette uses organic farming methods to bottle wines that are as close as possible to this magnificent terroir. Since 23, Dominique Hauvette has implemented biodynamic viticulture and cultivates her vines with very low yields. This organic Corbières wine is made from a rigorous selection of grapes from 5 plots with heavy, clay-limestone soils on the edge of the detangs between Peyriac-de-Mer and Bages. The wine is partially aged in barrels. This is a cuvée for laying down, made to last for years. Forget about 10 years in the cellar.

Le Roucas, a red cuvée from the domaine Hauvette, features 60% Grenache. More accessible in youth than the estate's other red cuvées, Roucas develops on notes of thyme, mint and cherries. The finish is always fresh and elegant. Light decanting and serving at 15-16° is recommended. A great bottle from Baux de Provence.
