Petraea champagne is made according to a principle similar to that of Solera: each year, 25% of the last harvest is added. Thus, the wine is composed of all the preceding vintages, in decreasing proportion. This perpetual reserve began in 1997. Aromas of fruit, white flowers and spices. The Gevrey-Chambertin les Racines du Temps de René Bouvier is a superb Gevrey on the great 2020 vintage. It develops a lovely bouquet of red and black fruits, resting on fine tannins. The wine is harmonious and refined, with a fresh, graceful finish! Bernard Bouvier admits: "When I have to choose just one wine to represent the Domaine, I choose Les Racines du Temps...". The perfect face that reflects the physiognomy of the Domaine, the vines have been drawing inspiration from the depths of the earth for nearly a century to give birth to a round, silky, refreshing bottle!
