Petraea champagne is made according to a principle similar to that of Solera: each year, 25% of the last harvest is added. The Champagne Francis Boulard & Fille Rosé is made using the rosé de saignée technique to achieve greater extraction of aromas, after a short maceration of 10 to 12 hours. The palate is sapid, the bubble very fine and elegant, fat texture, long finish on a hint of sweet spices.

Red fruit on the nose, with some citrus notes. The champagne has a straightforward profile on the palate, with a hint of saline minerality. It is made from 90% pinot noir.
