Petraea champagne is made according to a principle similar to that of Solera: each year, 25% of the last harvest is added. Thus, the wine is composed of all the preceding vintages, in decreasing proportion. This perpetual reserve began in 1997. Aromas of fruit, white flowers and spices. This Puligny-Montrachet 1er cru la Garenne du domaine Jean-Marc Boillot is a grande gastronomie Burgundy. This wine is full of youthful energy with a striking perfume of lemon sorbet and a touch of fresh lime. Its naturally fresher position allows it to focus on fresh citrus and a less exotic touch with a chalkier texture. Very mineral on the nose and rather expressive, it presents lovely fruity flavors on the palate, with good persistence and a taut finish.
