Les Cocalières rouge is a cuvée from Domaine d'Aupilhac which we particularly appreciate thanks to its great balance. Montpeyroux has a very southern feel, while Les Cocalières has that freshness and refinement that make it so charming. A magnificent cuvée in 2020 that will age for 10 years without any problem. Copa Santa is a magnificent gourmet cuvée from Mas Clavel. The nose of this organic wine is full of red and black fruit, with hints of spice and fine oak. The palate is full-bodied, with powerful notes of ripe fruit and sweet spices. The whole rests on velvety tannins; long, bewitching mentholated finish.

Cocalières blanc du Domaine D'Aupilhac has a freshness and length that characterize it. It develops aromas of white flowers and white peaches. Les Cargadous du Clos de la Barthassade is a superb gourmet white. Made from Roussanne and Chenin, it develops notes of vine peach and pear, all resting on discreet ageing. A fine mineral finish softens the wine.

The nose of Vignes Oubliées develops delicate notes of garrigue and pepper. The palate is fruity, with notes of cherry, sweet (very fine tannins) and spicy (pepper, garrigue). The finish is fresh, thanks to well-preserved acidity. A beautiful bottle of balance and refinement. To be discovered without delay!

Terrimbo rouge is a magnificent organic wine from Collioure: elegant, powerful and racy, it's one of the great Collioure wines. Made from Syrah and Grenache grapes, it develops notes of black fruits and cocoa; it should be drunk over 7 to 10 years.

Domaine d'Aupilhac's Carignan is powerful, with aromas of black fruit, licorice and smoke. It always has a fresh finish. 2020 is one of the greatest vintages of recent years, superb, with great ageing potential.

This Calcinaire blanc du domaine Gauby is very mineral with notes of white-fleshed fruit and citrus zest. A magnificent white Roussillon without any heaviness to accompany a scallop carpaccio with citrus fruits, for example.

This cuvée Céleste from domaine les Hautes Terres is a real favorite. This 100% Chenin is chiseled, straightforward, expressive and of great length. A great wine that rivals the best Loire Chenins. Superb!

Clos Maïa blanc is a superb blend of roussane, terret bourret and chenin. The nose develops notes of yellow fruit and aniseed. On the palate, the wine is tightly wound, with great complexity and a superb freshness on the finish. A great gourmet wine!

Gorgeous 100% chenin du Clos de la Barthassade cuvée. This organic white Languedoc wine is aged 18 months in barrel. It develops complex notes of exotic fruit and citrus, with a delicate woody finish. A great gastronomic white wine.

This Costières de Nimes 100% grenache from Clos des Centenaires could make many a Chateauneuf-du-Pape blush. This red wine develops notes of cooked fruit (raspberry, Morello cherry) and pepper. The wine is complex, with supple, greedy tannins. The finish is suave with aromas of roasted hazelnuts.

Mire la Mer des Clos Perdus is a powerful, racy cuvée. This organic Corbières wine is made from a rigorous selection of grapes from 5 plots with heavy, clay-limestone soils on the edge of the detangs between Peyriac-de-Mer and Bages. The wine is partially aged in barrels. This is a cuvée for laying down, made to last for years. Forget about 10 years in the cellar.

This La Miroenière cuvée is a favorite of this great 2020 vintage. This organic wine located not far from Chateauneuf-du-pape comes from a very qualitative terroir composed of sand and clay mixed with rolled pebbles. An exceptional wine from old Grenache vines, aged 16 months, partly in amphorae. Finesse and power combine in this great wine from the southern Rhone Valley.

Costa Caoude du Mas Haut Buis is a grand terrasses du Larzac de garde. This wine develops fresh menthol notes, spices, figs and red berries. Full-bodied, complex and long on the palate, this is a great southern wine! Guide des meilleurs vins de France 2025 : 93/100

Gorgeous bottle of the cuvée 2022 from this vintage! Antonin et Louis du Mas de la Seranne has a complex nose with notes of leather, but also fruit (blackcurrant, blackberry) and spices (pepper, cinnamon). The palate is fleshy and elegant. The tannins of this great Languedoc organic wine are harmonious and supple, supported by a long, fresh, mentholated finish. Magnificent bottle

La Soie rouge du Chemin des rêves is a magnificent Pic-Saint-Loup. It has an intense, complex nose, with aromas of jammy fruit, spices (nutmeg, cloves) and roasting. On the palate, it's opulent, silky and licorice-flavored. It goes well with tasty meats: leg of lamb cooked in rosé, duck with honey and spices, capon with chanterelles.
