Antonin et Louis du Mas de la Seranne has a complex nose with notes of leather, but also fruit (blackcurrant, blackberry) and spices (pepper, cinnamon). The palate is fleshy and elegant. La Soie rouge du Chemin des rêves is a magnificent Pic-Saint-Loup. It has an intense, complex nose, with aromas of jammy fruit, spices (nutmeg, cloves) and roasting. On the palate, it's opulent, silky and licorice-flavored. It goes well with tasty meats: leg of lamb cooked in rosé, duck with honey and spices, capon with chanterelles.

Rozeta is a superb Corbières from domaine Maxime Magnon. This fruit-filled organic wine knows how to be greedy and complex: it develops on notes of red fruit, garrigue and thyme. We appreciate the balance of this cuvée, which remains soft and digestible.

Maxime sublimates this grape variety, creating a very velvety wine that develops on notes of sweet spices and cooked red fruits. Like the 2019, the 2022 vintage Autour de Jonquières du Mas Jullien is built for cellaring. Like all vintages, you'll have to be patient and wait a decade or so to enjoy this wine, which develops notes of red fruits and light spices. A benchmark for the region.

The Fergaria cuvée from the Domaine de Cébène has delicate smoky aromas that hint at the best that Mourvèdre can give on this schist terroir, with fruitiness that's not overly exuberant. Aromas of fruit (raspberry, blackcurrant), sweet, bewitching spices and hints of garrigue follow through on a smooth, silky palate. The whole is a prodigy of balance. Felgaria will be enjoyed with relish in its youth, but it's also a wine for great cellaring. The Cuvée Des Clous du Mas Calvel is the estate's grand cuvée. The nose of this organic Pic-Saint-Loup is charming; it develops on notes of cherry, black pepper, licorice. The palate is velvety, resting on silky but present tannins. Magnificent long, greedy finish.

Lous Rougeos 2021 from Mas Jullien — “a mischievous vintage, the king’s jester in a suit and tie, as serious as it is profound,” according to Olivier Jullien — the result of 15 years of work to restore this abandoned high-altitude vineyard.

The color is deep garnet. The nose is very expressive, blending crushed raspberry, chicory, game, dark chocolate, graphite, and leather. The palate is penetrating and juicy, focused on intense black fruits, supported by firm yet smooth tannins. Decant before serving; serve between 14 and 15 °C.

50% old Carignan, 30% Syrah, 20% Grenache (organic), grown on limestone scree at 400 m, Saint-Privat. Full destemming, maceration for 15–25 days, aged for 12 months in 600-liter demi-muids, followed by 12 months in large oak casks, and 6 months in the bottle.
