El Botijo? is the brainchild of sommeliers-turned-oenologists Fernando Mora and Mario Lopez. The grapes are sourced from the Mario family's certified organic Las Cellas vineyard in Valdejalon, northeastern Spain. Winemaking in the region is thought to predate Roman colonization, and is ideal for the production of high-quality wines. These are the garagistes of the region, producing wines in small quantities and taking care at every stage of production, hand-picking grapes and adopting a "minimal" approach to production. The name El Botijo ??comes from the traditional Spanish water boat used in vineyards to quench the thirst of grape-pickers.

Botijo blanco is an attractive, intensely aromatic white. On the palate, it is dry with lively acidity and notes of lime and grapefruit that linger after each sip.
