The color is a sparkling pale gold. The nose reveals exotic aromas blended with a hint of citrus, an expression that is both ripe and fresh. The palate is full-bodied and refined, underpinned by a mineral structure, with a lively, briny finish. Serve at 10–12 °C.
100% organic, biodynamic Sauvignon (Biodyvin), 30 plots on caillottes (80%), flint (10%), and clay-limestone (10%), Bué. Hand-harvested, sequential pressing of whole clusters, 6 months on lees in stainless steel tanks.

François Crochet’s white Sancerre is much more than a blended wine—it is a faithful expression of some thirty plots spread across four communes (Bué, Sancerre, Crézancy, and Thauvenay), each chosen to express the nuances of the Sancerre terroirs. Far from being a generic wine, this cuvée draws on the same terroirs that define the estate’s single-vineyard wines—caillottes (80%), clay-limestone (10%), and flint (10%). It sets the tone for a range of exceptional consistency.
A former rugby player turned winemaker, François Crochet tends to his ten or so hectares with the same intensity as a high-level match—using Ecocert-certified organic and Biodyvin-certified biodynamic methods since 2020. Soils enriched with manure or green manure; natural grass cover on half the plots; plowing, hoeing, and raking on the other half. Hand-harvested with rigorous sorting, sequential whole-cluster pressing to gently extract the juice, fermentation, and aging for 6 months on the lees in stainless steel tanks—a natural winemaking process that puts the terroir front and center.
The 2024 reveals a nose of exotic flavors blended with a hint of citrus, a full-bodied yet refined palate, a distinct mineral structure, and a lively, briny finish.
Serve between 10 and 12 °C. Pairings: cheese soufflé, goat cheese, oysters, grilled sea bass. Aging potential: 3–5 years.
