The parcels, located in five communes, offer the different terroirs that make up the richness and diversity of the domaine's cuvées. In white, as in red, the wines, made using organic methods, are of outstanding precision and elegance.Guide des meilleurs vins de France 219, domaine 2 étoiles : "Now assisted by their son Clément, Eric and Christine Nicolas were the first, twenty years ago, to take up with panache the well-extinguished torch of Sarthe wines. Their cuvées show the full potential of forgotten terroirs. The reasons for their success are the same as elsewhere in France: an elitist viticulture, partly biodynamic, which anticipates the product's notoriety, and simple but scrupulous vinification. The coteaux-du-loir vieilles vignes Eparses produces a compact white with remarkably refined aromas (evolving towards gentian). It's usually kept waiting with L'Effraie (25-year-old vines). Triple Zéro du Domaine de la Taille aux Loups is the benchmark bubbly on Montlouis. This grand chenin is not dosed. The result is an airy, complex bubble that needs a few years to fully reveal itself. Worthy of a very good champagne. Guide des meilleurs vins de France 2017 : 15/20
