The color of Vincent Careme's Ancestrale is bright, light gold. The attack is supple, the bubble is fine and the minerality beautiful. We're on notes of white flowers, apple blossom. Vincent Carême is a young winemaker who cut his teeth in South Africa. He settled in Vouvray in 1999 and owns five hectares of vines. Respectful of nature and his terroir, Vincent's aim is to produce straightforward wines of great purity. One of the favorites of the selection. This forty-something tends towards increasingly dry wines, but his little moriers and tenders energetically integrate residual sugars, offering salty, sapid whites. The cursor is pushed even further with the start of biodynamic treatments; ageing in old barrels is increasingly precise."

This Vouvray Tendre du domaine Vincent Careme has much less sugar than a classic moelleux. Its balance makes it ideal for foie gras, but also exotic dishes such as tagine or coconut chicken.
