Mourvèdre, Syrah, Grenache, and Cabernet Sauvignon; hand-harvested; sorted on a vibrating table; Demeter-certified biodynamic since 1988. Fermentation lasts 12 to 21 days, depending on the grape variety, in stainless steel tanks and wooden barrels; aged for 18 months in large oak barrels.
