Guilhem Rouge is the result of a unique, southern-style blend — Alicante, Carignan, and Merlot — grown on the Jurassic limestone slopes of Villeveyrac, an arid and dry terroir rich in bauxite. These unique soils, typical of the area surrounding the Thau Lagoon, give the wines a distinctive minerality and a beautiful natural structure. Yields, deliberately limited to an average of 50 hl/ha, ensure fruit concentration without forced extraction.
Winemaking is traditional and straightforward: full destemming, maceration for 10 to 12 days at 25 to 30 °C, and regular pumping over for a gentle and gradual extraction of tannins.
The 2025 has an intense, deep red color. The nose is complex, combining red fruits and Mediterranean spices. On the palate, it offers a supple and fruity attack, well-integrated tannins, and lovely finesse.

The color is a luminous coral with salmon-colored highlights. The nose is pleasant and intense, floral and mineral with citrus notes. On the palate, it offers a beautiful balance of freshness, combining aromas of red currants and red berries, with a crisp and lingering finish. Serve between 10 and 12 °C.
