Guide revue des vins de France 2023: 89/100The Domaine D'Aupilhac is now a sure bet in Languedoc Roussillon as Sylvain Fadat produces some of the Languedoc's greatest wines. Sylvain believes that the work in the vines (ploughing, green harvesting, working organically...) has more influence than the vinification on the final result, and we can only agree when we taste his wines: beautiful respect for the fruit, beautiful enhancement by the wood and great complexity.
