Gilles Azam runs the Domaine Les Hautes Terres on the Limoux terroir. Situated at an altitude of 400 meters on an exceptional terroir, farmed organically, Gilles' vines produce some of the finest wines in the region, between substance and nervosity. Each year, the wines gain in definition and depth. The range is expanding, with magnificent chenins on the way. An estate we particularly like.

Serge Scherrer, who runs the domaine, has succeeded in acquiring these qualitative vines, which he has put into organic conversion. The wine is a little more structured than the letter carrier's vineyard, but remains accessible in its youth. A cuvée to drink over 5 years. A very promising terroir!
