The 2025 Bourgogne Aligoté from Nicolas Raspiller is one of the purest in Burgundy — “natural and rich, without veering into an overly natural style.”

The color is a bright pale yellow. The nose reveals aromas of crisp white fruit, a hint of lemon, and a subtle floral note. The palate is lively and fresh, with a lovely mineral tension balancing a full-bodied texture; the finish is briny and lingering. Serve at 10–12 °C.

Organic Aligoté since 2019, Chaux, Hautes-Côtes de Nuits. Hand-harvested, native yeasts, unfined and unfiltered, vineyard management using plants (nettle, comfrey).

Nicolas Raspiller is one of the most engaging winemakers of the new generation in Burgundy—a passionate self-taught winemaker who developed an interest in natural viticultural techniques at a very early age. After fifteen years working for other winemakers in Burgundy and Champagne, he established his own estate in 2017 in Chaux, in the Hautes-Côtes de Nuits, and immediately began the transition to organic farming—officially certified in 2019. His philosophy can be summed up in one sentence: “caring for the vines with plants.” Stinging nettle, comfrey, horsetail—natural preparations that enrich the soil and strengthen the vines’ natural defenses, without ever resorting to chemical inputs. At the same time, Nicolas is a beekeeper—hence the bee that adorns all his labels, a symbol of a vineyard in perfect health and harmony with its environment.

Aligoté de Bourgogne is one of the region’s most endearing grape varieties—all too often reduced to being merely an accompaniment to kir, it reveals a whole new dimension here. Hand-harvested, vinified with native yeasts, and bottled without fining or filtration, this 2025 vintage expresses a purity and richness rarely found in the appellation. Crisp white fruit, lemon, floral notes, mineral tension, and a briny finish—a gourmet Aligoté, far from the clichés.

Serve at 10–12 °C. Pairings: oysters, seafood, grilled fish, fresh goat cheese, aperitif. Best enjoyed within 3 years.
