Le Chant des Dolia rouge du Domaine La Croix Gratiot is an organic Languedoc that develops on notes of garrigue and red fruit. Anaïs Ricôme has emerged as the new benchmark for Picpoul de Pinet, a little-known appellation among French wine lovers. Yet this is the birthplace of some of Languedoc's great whites, starring the ancient piquepoul grape variety. After studying viticulture and oenology and gaining experience in a New Zealand vineyard, her father, Yves, suggested she take over this vineyard near Marseillan. Anaïs decided to reduce the size of the vineyard to 33 hectares, and to cultivate the vines organically, with an increasing emphasis on biodynamic practices. This music-loving thirty-something works with plot selection for her best cuvées. Above all, she has captured the elegance and unique touch of this grape variety with maturation in sandstone, foudre and stainless steel.

Intense color with violet hues. Nose of ripe red and black fruits, black pepper, graphite, aromatic complexity. Elegant and rich on the palate, fresh attack, lovely minerality, silky tannins, long finish. Serve at 16–17°C.
Mourvèdre, Syrah, and Grenache, vinified separately with daily punching down for gentle extraction. Clay-limestone soil bathed by the marine trade winds of the Thau Lagoon, from the Mas de l'Olivier vineyard. Organic and biodynamic. Aged in demi-muids for the Syrah and Grenache, and in stoneware dolia for the Mourvèdre.
Aging potential: 5 to 8 years.
