A very fine introduction to this delicate grape variety. The Domaine Tissot boasts exceptional terroirs, such as Les Bruyères, La Mailloche, En Barberon, Curon. The domaine's aim is to maximize the expression of its terroirs: the 35 ha of vines are now cultivated using Biodynamic methods (Demeter certification) to let the soil live, to ensure that the grapes are free of chemicals, to enable fermentation using natural yeasts, and to reduce the amount of sulfur used in the cellar. The wines have a rare personality and sparkle. Guide des meilleurs vins de France 2019, domaine 3 étoiles: "What a journey Stéphane Tissot has made since 1990! The conversion to organic farming began in 1999 for the vineyard, which is now biodynamically farmed. The reds and oxidative wines have acquired an unforgettable finesse. The rigor of the work accomplished places the estate unquestionably at the pinnacle of regional production."
