Nuit Grave du Mas des Chimères is a blended wine, with a majority of Syrah, Grenache and a little Mourvèdre. This wine has great complexity with smooth tannins, a fresh, gourmet wine. It's a wine for laying down (8 to 10 years without fear) while still being accessible in its youth, to be accompanied throughout its evolution over time.

The Mas des Chimères is located in the commune of Octon on the edge of Lac du Salagou. This estate benefits from 2 types of terroir, one the "terres rouges" (Permian very old soil of 25 million years) on which are produced the Vins de Pays des Coteaux du Salagou and the other on the basaltic plateaus where are produced the AOP/AOC, Coteaux du Languedoc and Terrasses du Larzac. Guilhem Dardé began working on the estate with his father and uncle in 1974, when the grapes were brought to the village Cave Coopérative. He set up his own winery in 1993, creating the Mas des Chimères. His wife Palma gradually worked with him from 1996, Maguelone his daughter joining them in 28 after long studies. The Mas des Chimères was soon being farmed organically: the wines produced here are highly expressive and possess a beautiful originality. Prices remain very reasonable!
