At altitude, in the hills and valleys of the Hautes-Côtes, Domaine Boris Champy practices viticulture that's a little out of step with that of the great wine-growing coast. The plots are islands of biodiversity, with multiple enclosures, trees, hedges, walls, meurgers and fruit trees.
