Nose of lemon, grapefruit and white flowers (lily of the valley, elderberry), light mineral touches spice up the bouquet, the palate is airy and subtle, like an aromatic cloud, leaving on the finish a sensation of salinity so characteristic of St Hippolyte's granite terroirs. The wine is fuller and more complex than a simple Riesling St Hippolyte; the material is more subtle and bounces back with little acidic, tonic twitches.
